Helmed by Chef Alberto Santos, the restaurant’s menu is elevated with an innovative selection of tapas to satiate all tastes, all inspired by authentic Portuguese flavours infused with the freshest ingredients. Signature tapas includes Cheese Toast with Octopus and Black Pork, Sliced Pork Sandwich in Porto Style, Mussels in Rich and Spicy Tomato Sauce, Octopus Salad, complemented by other meticulously crafted dishes including Desalted Cod Fish Pie, Grilled Octopus with Roasted Potatoes and Seasonal Vegetables in Romesco Sauce, Beef Tenderloin Steak with melted Cheese served with Beer Sauce and French Fries, Roasted Suckling Pig Bairrada Style served with Mixed Salad and French Fries, Pork Knuckle and Red Bean Stew, Roasted Suckling Pig with Oven Rice, Stir Fried Mushrooms with Onion, Egg and Straw Potatoes, as well as appetite-whetting dessert Roasted Apple, Crumbles and Vanilla Ice Cream to round up the menu. To elevate the diverse offerings of the menu, a variety of starters and main dishes are served with seafood, fish, meat and vegetation options, complemented by a generous selection of Portuguese desserts, fine wines and cocktails to satiate customers’ palate.
Since 2018, Tapas de Portugal has been credited with the prestigious “Star Merchant Award” under the Quality Tourism Services Accreditation Scheme by Macao Government Tourism Office. Chef Alberto Santos
Born in Macau, Chef Alberto Santos embraced with over 15 years of experience in the culinary industry across prestigious hotels and restaurants in Portugal, Spain, and Macau, bringing a wealth of culinary expertise and techniques to Tapas de Portugal. His diverse roles have endowed him with exceptional skills in menu development, procurement, kitchen management, and training evaluation.
Chef Alberto Santos commenced his culinary journey in Spain in 2009 and in 2011 he embarked in a new adventure as a Sous-Chef in Hotel Forte de São Francisco in the northern city of Chaves in Portugal, a hotel located in a XVII century building classified as a National Monument where he acquired deep knowledge of traditional Portuguese cuisine. In 2013 he returned to Macau as Chef de Partie at Sheraton Hotel at Sands Cotai Central (now known as The Londoner), specializing in kitchen operation and food preparation for the internal dining outlets and banquet events. Before joining Tapas de Portugal, he gained significant recognition and experience in two major properties under Melco Resorts & Entertainment—Studio City and Morpheus Macau—excelling as a sous chef in both Western and Asian cuisines. His expertise in kitchen management, costing, procurement, menu creation, and food safety and quality control has been instrumental in his success.
Chef Santos has a knack of infusing modern and contemporary twists into traditional ingredients sourced both locally and internationally. This creativity results in a delightful array of tapas, starters and main dishes, all inspired by the authentic flavours of Portugal, Spain and other European delights. For him, crafting each dish with the freshest and finest ingredients, coupled with passion and creativity, embodies the essence of culinary art and enhances a perfect dining experience.
He earned his Diploma and Certificate in Culinary Arts and Food Service Management from Chaves Vocational School in 2009, followed by a Diploma and Certificate in Pedagogy and Culinary Instruction from the Consultua Institute in 2013. His extensive knowledge encompasses food science, food safety and sanitation (HACCP), kitchen services, baking and pastry arts, wine and beverage service, as well as restaurant and kitchen management. Additionally, he is well-versed in psychology, pedagogical methodologies, collaborative learning platforms, and training evaluation, equipping him with essential skills for culinary instruction and management.
Chef Santos’s numerous accolades and certifications in operations, coaching, and leadership further enhance his expertise, making him a well-rounded professional in the culinary field.
